the S is sport mode and will hold the revs about 1000 rpm above normal when changing gears, usualy used when you need a bit friskier response from your disco, say at intersections or when overtaking on dual carriage ways
M is manual mode for when the the box is in low ratio, selecting M will allow manual selection of gears and will only change up or down when you select
