Default Disco II Engine Problem...Need Opinions

I lost the coolant a couple weeks back on my 2000 Disco with 67K miles and had new head gaskets put on. They machined the heads to spec. and rebuilt it. Drove it 400 miles with no problems and then had the same issue. First time it was like a milkshake from coolant/oil mix. This time it has a trace of coolant in the oil, but I have lost enough coolant to peg the gage and cause it to overheat. It shows no signs of coolant loss under the vehicle or out the tailpipe. The shop that fixed it is reputable (a friend of mine is the owner) and I trust them 100%, but they are not sure what may be wrong this time around. I'm concerned it make be in the block. I need opinions for my next step. Thanks.
