You will certainly have to pull the radiator, and since the radiator frame is bolted to the breakfast, it's easiest to pull it and the breakfast as one unit. Now that you have gotten that far, it is absolutely no bother at all to pull both wings. I'm not making this part up, it couldn't be easier, just 4 bolts (per side) attach it to the bulkhead, and a couple holding it to the frame.
I haven't ever tried to do an engine swap with the wings on simply because it is that easy, but at the minimum, the breakfast (and radiator) need to come off just so you can pull the engine far enough forward to clear the input shaft.
I can't advise you re the clutch plate, sorry. I believe the 2.5 used the same dry plate as the last 2.25s but don't quote me on that.
