While I was sitting in a drive-thru for about 10 minutes, I heard a "pop" and saw the steam rising. At first thought it was a torn hose, but when I looked, the top hose came off the radiator. The temp was dead center before, and after putting the hose back on and toppin goff the fluids, all seems well. What would cause this to happen? I just had my 90K, and the hose was fine and was not a recall hose. Could it have been an air bubble? I don't know, but hopefully someone will. Let me know what you think...

How hot was it outside that day?
Might've been a big build up of pressure in the system that caused the hose to pop off, usually they would tear, I would think, never seen that happen before.

The ambient temp must have been around 100F. It's Florida. I ran her in my driveway with no problems for half an hour and no problems and the temp outside is about the same. It does have the spring clamp tightener not the screw clamp type if that makes a difference.

Yeah, if someone had serviced it before, typically you don't reuse these spring load clamps, they are usually meant for only one time use.
Has someone serviced that truck's cooling system?

Have your cooling fans all been working, if not that could have caused the overheat. I would suggest you replace the spring clamp with a screw type and add coolant back. maqke sure you bleed all the air out of the engine or you will start running hot.
