Does anyone know what the largest size tire I can put on my '03 Disco stock 16" wheels without doing any mods? I was told that I can put 255-75-16's on it without a problem...any thoughts?

I think you can just get them on without any mods. I run 255x70x16 BFG mud terrains and still have good clearance, and the size you are contemplating are only 1 inch taller, ie 1/2 inch bigger either side.

You can actually put 265/70/16's on it with no problems. I've been running those on an '01 DII now for about 6 months with no problems at all and no mods of any kind. You really need to stay focused on the total tire diameter. You need to stay under 31" or you will have problems. I posted a link below to a great tire calculator that will help you compare various tire sizes.
