Default funny 3.5 efi idling

Hi

when the car is cold the engine fires up and idles fine at about 800rpm when hot the same when in between it hunts up and down from 800-0 and cuts out or just keeps hunting if i pull off and drive it is fine.

It has a new engine and all mixture is ok. local dealer cant see what it could be as it is this intermittent. everything seems ok any ideas? everything has been cleaned and or checked

many thanks
