Default Head gasket tightening question

I have erling gaskets and there are two sets of instructions, one set with a series of torque values and one set with an initial torque value and then two 90 degree turns. Since I am using TTY bolts I assume I will use the second set, correct? I'm relatively certain I know the answer but.....

Also, neither side is marked up. Does the side with more metal face up or down?
