Default AC fans

Can someone tell me what controls the AC fans please.
I was told the as soon as the AC is turned on and the fan control is set to 1 or above, the fans should turn on. So what does the Air conditioning fan temperature switch (sensor) do? This is the sensor in the Thermostat housing.

If the truck starts to get too hot, the AC fans will "override" and come on. Extra cooloing....
