I have a 1997 300TDI which is making what sounds like tyre roar when I turn, sometimes only turning left other times turning right. Any ideas guys? Wheel bearings I thought but not easy to detect.

A shot wheel bearing is relatively easy to detect. Just grab the top of the tyre and pull/push. You will hear/feel a clunking coming from the centre of the wheel if the bearing is gone.

It's not cv noise is it???
Check the above and also check that the swivel housing is full of grease or oil(not sure of differences between UK/US models, US had grease by that year), there is a plug on top of the swivel housing to check.

Depending on the mileage and the last time the wheelbearings have been opened and repacked/replaced, that job should be done first if your going to do anything. Since you said the CV's have grease in them, most likely they are fine since they are sealed in the swivel balls. Have a friend or significant other stand outside the vehicle to pinpoint the sound and maybe where it is coming from. A cv clicking is a very obvious sound, hard to miss that one.
The wheel bearings are probably just dried up with age as the rear seals on the hubs are prone to falling apart, letting road grime/grit and water in. Much worse if your truck is wheeled. Another thing to think about is tires and what your running. If you have worn mud terrains, that might be where some of the noise is coming from too, but I would buy the parts to rebuild the hubs for sure. Cheap and easy job that should be done regularly anyway. Good luck with it. If you need any pointers let us know.
