16.5 MPG on 30” tires

Getting 16.5 MPG right now, about to go from 30” to 32” tires. Will update on efficiency changes

I believe oversize tires defeat the accuracy of your speedo. Your calc would be better using a satellite - say use Waze to track your miles.

This is a good point. Know of any tools to calibrate the spedo?
Don't do it. Keep track via Waze of actual miles vs reported miles and noodle out the adjustment. Then factor it in when you want to determine mileage.
Someone a few years ago posted calculations. Found this but this is not the thread:
I got a 2 inch lift with 32 inch 265/75/16 tires and this thing is sucking gas now.............................. is this normal ?

Of course it is normal, you just stuffed up all your gearing and it is having to spin a lot heavier wheel.
What makes it worse is that your odometer is now 10% out and that leads to 10% less miles for the same amount of fuel.
