I was able to get the disco that we picked up running after replacing the fuel pump. It had sat for a year before we picked it up. It idles smoothly, but has a loud knock. I'll post a youtube link below showing the sound.

If anyone can help let me know where we should initially look I would really appreciate it. I planned to change the oil tonight and may drop the pan to inspect the lower end as well.

That noise is too loud to be oil related. My guess is it was caused by an overheating event that allowed the liners to slip, or low oil pressure that wore out the bearings. The easiest fix here is a new motor, unfortunately the high cost of said motor can often be more than what you paid for the truck.
