I generally leave it with 3/4 of a tank, almost full due to condensation, but was told that is better to leave it with a 1/4 by a mechanic since its warm temps here.
I usually leave the car parked for 2 months 1/2 so was wondering what is best.

Back in Phoenix and Las Vegas I used to leave fuel levels on my BMW and VW at full to 3/4 full whenever I deployed from 4+ months. For my 2 year deployment I filled up and added a fuel stabilizer to the tank.
For 2.5 months you'll be fine at 3/4.

Thanks! Will try to find the Sta-Bil fuel stabilizer and add it to the tank.

I use it in all my power tools. My leaf blower, which gets used about once a year, starts on the first pull. Kind of amazing stuff.
