OK, lemme get this straight. you have replaced the head gaskets twice in the recent past and still have an overheating problem. When the head gaskets were replaced, were they replaced with composite or steel? If composite, new head bolts? Were heads resurfaced? condition of radiator/fan clutch?
Replacing the thermostat was wasted time and money IMO
